Kiritsuke is the only multipurpose traditional Japanese knife, and in Japan only the executive chef in the kitchen is allowed to Use one. Ultra-thin and incredibly sharp, these blades feature a degree blade angle making the blade flexible, but much sharper than traditional western knives.
