The blade is constructed of a German high-carbon stainless steel – the same steel used by many of the higher-priced German knife manufacturers. The edge is hard enough to hold an edge, but is not so hard that the user can not steel or resharpen the blade. The handle is injected molded onto a longer than normal tang, to produce a tight bond between the handle and blade, resulting in a very strong handle that can take the abuse of commercial use. The blade handle is a lower profile to fit scabbards, allow for different hand positions, and allow the user to have better control of the blade without the handle hanging on product or hitting the work table. The handle is lightly textured, but easy to clean and sanitize.
